An excellent way to make the most of a slightly bland melon without spending the afternoon scraping a tray in the freezer. Before the Slushi, I used to spend my afternoon scraping the tray with a fork to avoid a hard block. Today, I simply blend my fresh fruit and the machine handles the freezing process evenly. The result is deliciously frosty, is great to eat with a spoon, and benefits from the zing of ginger to wake up the fruit’s natural sweetness.

A fruity and slightly spicy frozen dessert, perfect for saving a bland melon in just a few minutes of preparation.

Ingredients

  • 800 g melon flesh

  • 1 piece of fresh ginger (about 2 cm), peeled and grated

  • 4 tablespoons honey (or agave syrup)

  • The juice of one lime

  • 100 ml water (if the melon yields little juice)

Instructions

  • In a blender, blend the melon flesh with the grated ginger, honey, lime juice, and water until a smooth liquid is obtained. Honey provides the essential sugar level to form beautiful crystals.
  • Strain the mixture through a chinois or fine-mesh sieve to remove ginger fibers and thick pulp. Filtering these fibers prevents clogging the machine’s auger.
  • Pour the resulting juice into the Ninja Slushi bowl, checking scrupulously that the level is between the MIN and MAX markers.
  • Select the Slush program and let it run for about 45 minutes until you get a granita texture ready to be served with a spoon.

Rum and mint version

    Rum and mint version : Blend a few mint leaves with the melon, add 60 ml of white rum to the bowl and select the Frozen Cocktail program to handle the alcohol.

If you come across a melon that is a bit mealy or lacks juice, this is truly the ultimate rescue recipe at home. The heat of fresh ginger immediately wakes up the fruit, bringing great depth in the mouth. Don’t hesitate to taste your liquid before starting the cycle: it should seem almost too sweet at room temperature, because cold always numbs the taste buds a little. I always insist on the meticulous preparation of particularly fibrous or pulpy ingredients before entrusting them to the appliance. If fibers accumulate during mixing, it risks straining the motor and triggering error lights. So take a minute to pass your melon juice through a fine-mesh sieve. This small preventive gesture not only ensures the proper functioning of your machine in the long term, but it also offers an infinitely more pleasant final texture, without any stringy pieces that would spoil the pleasure in the mouth.
