To avoid running the machine three times in a row, I prepare a neutral lemonade base that I color directly in the glasses by playing with the density of the syrups. I first tried making three separate batches, but the first one would melt while waiting for the others. With this method, you get a stunning visual effect and an intensely fresh drink very quickly. The contrast between the lemony core and the fruity sweetness of the layers always makes an impact at happy hour, with a perfectly velvety texture through the straw.

A clever trick to assemble a three-color granita in the glass from a single batch of neutral lemon base.

Ingredients

  • 850 ml water

  • 200 ml cane sugar syrup

  • 150 ml freshly squeezed lemon juice

  • 100 ml grenadine or strawberry syrup (for the red layer)

  • 100 ml non-alcoholic blue curaçao syrup or blue sports drink (for the blue layer)

Instructions

  • Mix the water, cane syrup, and lemon juice in a pitcher. Ensure you have a total volume of 1200 ml, perfect for filling between the min and max marks of the bowl.
  • Pour this lemonade base into the Ninja Slushi and start the Slush program (with this sugar dosage of approximately 12%).
  • Let the machine run until you get a very thick texture (about 60 minutes).
  • When serving, pour 25 ml of red syrup (grenadine) into the bottom of each glass. Pure grenadine is very dense, it stays at the bottom without mixing with the ice.
  • Gently add the lemonade slush on top using a spoon to break the fall and avoid stirring the bottom.
  • Finish by slowly pouring 25 ml of blue syrup over the top of the preparation to create the final layer, then serve immediately.

    Red, white, and blue cocktail version : Keep the same base, but use 25 ml of strawberry liqueur at the bottom of the glass, and a mix of 15 ml of vodka and 10 ml of alcoholic blue curaçao for the top layer.

The secret of density for clean layers

To achieve a three-stripe visual without everything turning into a purple mess, it’s all about the weight of the liquids. Commercial syrups, like grenadine, are extremely sugar-heavy and very dense, which literally pins them to the bottom of the glass. Conversely, if you slowly pour a low-calorie syrup or soda over the top of your frozen preparation, the color will stay in suspension. I use exactly the same density mechanics for other layered recipes or for my Blue Raspberry Slush in the Ninja Slushi. When assembling, the real trick is to use the back of a spoon to break the fall of the lemon base: without it, the weight of the ice would pierce the red layer.

Why a neutral base with 12% sugar?

I’m often asked why we don’t just put water and lemon in the bowl. With the Ninja Slushi, the sugar rule is non-negotiable: without it, the water freezes solid and the auger ends up jamming. My mixture of water, lemon, and cane syrup is around 12% sugar, an ideal antifreeze threshold for the Slush program. If you try to reduce this dose under the pretext that you will add ultra-sweet syrups to the glass later, the machine will display error lights. Therefore, prepare a truly well-balanced lemonade beforehand; the harmony will come from the contrast with the pure flavors added at the last moment.

Why does my machine beep during the preparation of the lemon base?

This is often a sign that the mixture is not sweet enough, or that the bowl is overfilled. Check that you have added the required amount of cane syrup: sugar prevents the mixture from freezing solid.

Can I use a real berry coulis at the bottom?

A homemade coulis is generally less dense than a pure syrup. It risks rising and blurring the separation with the white layer. If you insist on using it, remember to sweeten it well to make it heavier.

Does the 1200 ml preparation fit in the Ninja Slushi FS301?

Yes, this volume fits very well in the FS301. You will be slightly below the maximum mark on the bowl. Simply start the usual Slush program.

Can I prepare the frozen lemonade in advance for happy hour?

Absolutely! The machine maintains the cold very effectively. Let it run gently, and assemble the three-color layers in your glasses just as your guests arrive.
