Inspired by the famous American Tropical Cream Slush, this homemade version balances the acidity of pineapple and the sweetness of coconut. I noticed during my first trials that coconut water alone froze too quickly and became very hard: adding sugar syrup softens the granita perfectly. The result is an intensely fruity drink, well-chilled and very pleasant to sip on hot summer days.

Ingredients
500 ml pineapple juice (100% pure juice)
300 ml coconut water
150 ml mineral water
50 ml cane sugar syrup
A few pieces of fresh pineapple (for garnish)
Instructions
- In a pitcher, mix the pineapple juice, coconut water, mineral water, and cane syrup.
- Pour the preparation into the Ninja Slushi bowl, making sure to stay between the min and max lines (the total volume here is 1 liter).
- Select the Slush program and let the machine work for about 45 minutes. The syrup ensures the threshold of 5g of sugar per 100ml, which is essential for a perfect set.
- Serve directly as soon as the texture becomes drinkable with a straw and garnish with a few small cubes of fresh pineapple on top.

Tropical Cream Slush Version (Sonic Style) : Replace the mineral water with 150 ml of full-fat heavy cream, select the Milkshake program, and serve with a scoop of vanilla ice cream at the bottom of the glass.

To succeed with your granitas in the Ninja Slushi, the golden rule always concerns the sugar dosage. In this recipe, we aim for a total ratio of around 110 g per liter. Pineapple juice brings its own natural sweetness, but it is not enough to prevent the coconut water from freezing into a compact block. By adding a little cane syrup, we lower the freezing point of the liquid. This is exactly what allows the machine’s blades to continuously stir the preparation without stalling the motor. If you remove the syrup thinking you are making a low-calorie version, you risk hearing your device beep and stop abruptly. If you like variety, this same principle applies when I prepare a 100% fruit mango slushie or a watermelon slushie, where I always have to adjust my sugar intake according to the ripeness of the fruit.

In the United States, the Sonic Drive-In chain serves this type of drink under the name Tropical Cream Slush, often adding vanilla ice cream. If you try this indulgent version with heavy cream, remember to use the Milkshake program rather than the classic Slush mode. Dairy products react differently to the cold, and this specific stirring will create a perfect smoothness without causing the cream to split. For tasting our classic version, serve it immediately while it is still soft. If you have any left in the bowl, simply leave the device on: it will maintain freshness and consistency for up to 12 hours. Avoid transferring leftovers to a home freezer, as everything would become a solid ice cube impossible to drink with a straw.
