Fresh watermelon mint slushy

Perfect your watermelon slushy with the Ninja Slushi. Get a perfect straw-sippable texture using the Frozen Juice programme, without diluting the fruit's flavour.

Ninja Slushi compatibility

Program used: Frozen Juice (frozen juice)

There is nothing like blended, machine-processed watermelon for a refreshing slushy without using a single ice cube. In a blender, adding ice cubes always diluted the fruit’s taste, but the Slushi solves this problem. You get a drink of absolute freshness with a straw-sippable texture that retains all the intensity of the watermelon and mint.

An ultra-fresh watermelon and mint juice, chilled by the machine without any ice cubes to preserve the full flavour of the fruit.

Ingredients

  • 750 ml fresh watermelon juice (blended and strained, approx. 900 g flesh)

  • 100 ml water

  • 50 ml lemon or lime juice

  • 100 ml cane sugar syrup

  • A few fresh mint leaves

Instructions

  • Blend the watermelon flesh with the mint leaves, then pass the mixture through a fine sieve to collect only the juice without seeds or thick pulp. Straining the pulp prevents the machine’s pour spout from clogging.
  • In a container, mix the strained watermelon juice, water, lemon juice, and sugar syrup. The syrup ensures a high enough sugar content to prevent a block of ice from forming.
  • Pour the mixture into the Ninja Slushi vessel (the level will be about 1000 ml, perfect between the min and max markings) and select the Frozen Juice programme.
  • Let it run until you achieve a straw-sippable texture and serve immediately.

Aniseed cocktail version

For an adult aperitif version, add 100 ml of ouzo to the initial mixture and select the Frozen Cocktail programme instead.

Why I always strain my watermelon juice

When I started making fresh fruit drinks with my machine, I tended to put everything straight into the vessel after a quick blitz in the blender. Big mistake with watermelon: the slightly stringy pulp tends to clump together under the action of the cold. As a result, the pour spout gets blocked and serving soon becomes a chore. Taking five minutes to pass the mixture through a fine sieve really changes things. You get a clean juice that freezes in a smooth, even way. If you love this summer fruit, you can also try my watermelon slushy with Ninja Slushi for a slightly different version.

The importance of sugar in slushies

One might think that a good summer fruit is enough on its own. However, in the Slushi, sugar acts as an antifreeze. Without an external addition, the natural watermelon juice risks freezing into a hard block against the sides of the vessel, instead of forming the fine crystals that we love to drink through a straw. That is why I always add a dose of cane syrup. The Frozen Juice programme needs this balance to work correctly. Before pouring your mixture, taste it at room temperature: it should seem slightly too sweet, because the intense cold will then dampen that perception.

Have you tried adding a hint of melon for a change?

Frequently asked questions

Can I use shop-bought watermelon juice?

Yes, but check the sugar content. If it is already very sweet, reduce the amount of cane syrup in the recipe a little so the result isn’t too sickly.

Why does the machine stop with flashing lights?

This is often a sign that the mixture is freezing too hard. This happens if there is not enough sugar. Add a little syrup diluted in water directly into the vessel.

How long does it take for the texture to be right?

With the Frozen Juice programme and room-temperature ingredients, allow for about 45 minutes. If your juice comes straight from the fridge, it will be a bit faster.
