Ingredients

  • 800 ml dark grape juice (ideally Concord variety)

  • 150 ml mineral water

  • 50 ml blue raspberry syrup (for the color and typical aromatic profile)

Instructions

  • In a large pitcher, thoroughly mix the grape juice, water, and blue raspberry syrup. The added water lightens the texture slightly, as a very sweet pure grape juice takes longer to set.
  • Pour the preparation into your Ninja Slushi tank, checking that the level is well above the min line, while staying below the max mark.
  • Select the Slush program and let the machine work until a straw-drinkable consistency is achieved. The sugar naturally provided by the juice ensures the drink sets well.
  • Serve immediately in large glasses equipped with wide straws.

    Summer cocktail version : Add 120 ml of vodka or white gin directly into the pitcher before starting the Frozen Cocktail program, taking care not to exceed the alcohol limit.

The balance between natural sugar and adding water

When preparing a drink based on pure grape juice, you are faced with a liquid naturally very concentrated in carbohydrates. This is an undeniable advantage for the Slushi, because sugar acts as an antifreeze and prevents your preparation from turning into a solid block. However, if the juice is very sweet, the machine will take much longer to freeze the mixture. That is why I always add a small amount of mineral water in this recipe, as I sometimes do for a homemade lemon slushie. It helps to loosen the fruit’s natural syrup and speed up the formation of regular crystals. The blue raspberry syrup then compensates for this dilution while providing the characteristic visual hue expected from a traditional blue slushie. If you use a light juice, feel free to skip the water to ensure it stays cold properly.

Adapting the recipe for a cocktail version

Transforming this classic into a festive drink for an aperitif is very simple, but requires a little vigilance on the dosages so as not to ruin its texture. Alcohol does not freeze in these countertop tanks: if you put too much in, the consistency will remain liquid, regardless of the mixing time. In my base recipe which makes about one liter, I limit myself to 120 ml of spirits (such as a neutral vodka or a white gin). This is the ideal ratio to obtain a real frozen result without straining the motor. On your control panel, it is then imperative to switch to the Frozen Cocktail program. It is programmed to compensate for the liquefying effect of alcohol through adapted mixing. If you ever notice that the paddle is spinning in a vacuum after an hour and nothing is setting, it is often a sign of overdosing: simply add a little non-alcoholic grape juice to rebalance everything.

Why is my grape preparation taking more than 45 minutes to set?

If your grape juice is extremely sweet, the freezing point drops. The machine needs more time to texture the liquid. Add a splash of water to speed up the process.

Can other syrup flavors be used with the grapes?

Absolutely. Blue raspberry syrup provides the iconic color, but blackcurrant or blackberry syrup will work perfectly with the Slush program.

How to store leftovers of this blue slushie?

Simply leave the drink in the tank while it’s on if you plan to have more in the following hours. For the next day, pour the liquid into the refrigerator and restart a full cycle when the time comes.
