Homemade Lemon Slushie

Ninja Slushi compatibility

Program used: Slush (slushie)

An express alternative to traditional granita that skips the long syrup refrigeration step. I used to put this syrup in an ice cream maker after four hours in the fridge, but here everything goes straight into the machine’s tank. The result is an intensely thirst-quenching drink, with an ideal balance between citrus acidity and essential sweetness. Its finely crushed texture can be sipped through a straw effortlessly, providing an immediate chill for hot days.

  • 150 ml fresh lemon juice

  • 120 g granulated sugar (or cane syrup)

  • 1 teaspoon finely grated lemon zest

Instructions

  • In a container, mix the water, lemon juice, sugar, and zest until completely dissolved. Perfectly dissolving the sugar ensures smooth crystallization and protects the auger.

  • Serve immediately in glasses with a wide straw.

The importance of sugar in acidic recipes

The secret to a good frozen drink always lies in the balance of its composition, and this is even truer with citrus. Lemon provides great acidity, but you must maintain a sugar ratio of around 14% (which is about 140 grams per liter) for the magic to happen in the Ninja Slushi. This dosage isn’t just about taste: sugar acts as a natural antifreeze that prevents the water from freezing into a solid block. It’s what allows the machine to churn the preparation and create that fluid effect. If you reduce the sugar too much for fear of calories, the lights may flash during the cycle because the motor will be straining against hard ice. If you prefer other tangy flavors, you can apply this same rule to a lime raspberry granita with Ninja Slushi.

The time savings compared to the traditional method

I spent a long time preparing my granitas using the syrup method. I would heat the water and sugar, let it cool, then place everything in the refrigerator for at least four hours before churning it in an ice cream maker. With this appliance, this long wait disappears. The machine handles the temperature drop and the mixing in a single cycle of about thirty minutes. Simply dissolve everything cold and pour directly into the tank. Be careful with the zest, however: if they are cut too large, they can slightly clog the valve during serving. This is why I always recommend grating them as finely as possible, or even filtering them if you want a perfectly smooth consistency, as you would for a frozen lime mojito.

Frequently asked questions

Why does my machine show an error while mixing the lemon slushie?

This is almost always a sign of a lack of sugar. If you used less than 120 g, the liquid freezes too hard and the auger jams. Add a bit of cane syrup, stir, and restart the cycle.

Can I replace white sugar with a sweetener like stevia?

No, classic sweeteners do not have the same freezing point depression properties. The mixture will freeze into a block of ice, which will cause the warning lights to flash.

Is it necessary to filter the lemon juice before pouring it?

It is highly recommended if your freshly squeezed juice contains pulp or seeds. A clear liquid ensures smooth flow and protects the service valve.

How long does this slushie keep in the tank?

As long as the machine is running on the Slush program, the texture is perfectly maintained. You can keep it available this way for several hours on a summer afternoon.
