Pineapple Elderflower Fizz Mocktail with the Ninja Slushi

Make a refreshing pineapple elderflower fizz mocktail with the Ninja Slushi. An alcohol-free, floral frozen drink that is easy to make using the Slush programme.

Ninja Slushi compatibility

Program used: Slush (slushie)

I really enjoy using the classic programme on my machines for alcohol-free creations that offer a change from the usual soft drinks or the traditional classic pineapple slush. This floral and fruity version combines tropical sweetness and the subtlety of syrup, for a very fragrant result. You will get a fine granita, perfect for sipping slowly on a summer afternoon. The sparkling water adds a light, airy texture that is truly pleasant on the palate.

A floral and fruity alcohol-free alternative, ideal for using the machine’s classic function.

Ingredients

  • 600 ml pineapple juice (100% pure juice)

  • 100 ml elderflower syrup

  • 50 ml fresh lime juice

  • 250 ml sparkling water (or still water)

Instructions

  • In a jug, mix the pineapple juice, elderflower syrup and lime juice.
  • Gently add the sparkling water to the mixture to limit the foam: incorporate it carefully to gauge the exact final volume before filling the machine.
  • Pour everything into the vessel of the Ninja Slushi (the level will be about 1 litre, well above the min mark) and start the Slush programme.
  • Wait until you reach a drinkable texture with a straw, then serve immediately.

Grapefruit version

Replace the pineapple juice with grapefruit juice for a refreshing bitterness that pairs very well with the elderflower.

Handling sparkling water in the vessel

When preparing this type of drink, incorporating the gas requires a little attention. Sparkling water tends to foam, especially when it meets the acidity of the lime and the sugars from the syrup. This is why I recommend pouring the sparkling water gently into your jug before transferring it to the machine. Once the programme is started, the constant mixing will release some of the gas, which ultimately gives a lightly airy texture that is less dense than a classic frozen juice. Never fill the vessel up to the max mark with a carbonated drink; always keep a safety margin.

Sugar balance for a perfect consistency

In any preparation with the Ninja Slushi, the freezing point depends directly on the sugar content, which acts as an antifreeze. Here, with pure pineapple juice and elderflower syrup, we are at around 14 g of sugar per 100 ml of liquid. This ratio is perfectly targeted for the Slush programme: it prevents the drink from freezing into a hard block on the auger. If you decide to adapt this recipe by replacing the elderflower syrup with an unsweetened infusion for example, do not forget to compensate with simple syrup, otherwise you might hear the machine beep and see the temperature light flash.

Frequently asked questions

Can I use still water instead of sparkling water?

Yes, still water works very well and simplifies the mixing process because it does not foam when added. The drink will just be a little denser on the palate.

Should the pineapple juice be strained before pouring?

If you are using fresh-pressed pure juice with a lot of fibre, a quick strain through a fine-mesh sieve helps achieve a smoother result, but it is not strictly necessary for the Slush programme.

How long does it take for the texture to be ready?

With a volume of about 1 litre of liquid poured at room temperature, allow for around 45 minutes to reach the right texture.
