Ingredients

  • 350 g blackberries (fresh or frozen and thawed)

  • 120 mL honey or agave syrup

  • 80 mL fresh lime juice

  • 500 mL water

  • 50 mL cane sugar syrup (to adjust the sugar ratio as needed)

Instructions

  • In a blender, blend the blackberries into a smooth purée, then pass them through a sieve to remove the small seeds. Filtering the purée prevents the seeds from clogging the auger or being unpleasant.
  • Mix the smooth purée with the honey, lime juice, water, and sugar syrup until completely dissolved. The honey and syrup ensure the formation of a perfect slush texture.
  • Pour the mixture into the vessel of the Ninja Slushi (total volume of approximately 1 litre, between the min and max fill lines) and select the Slush programme.
  • Let it freeze until you reach a chilled, straw-sippable texture (about 45 minutes). Serve immediately.

Sparkling cocktail version

Add 120 mL of gin to the mixture before starting (while respecting alcohol limits), or top up with a splash of sparkling water when serving in the glass.

The secret to a beautiful sippable texture

To succeed with this type of drink, sugar balance is essential. Since there is no alcohol here, the honey and syrup will act as an antifreeze. If you reduce the dose too much for fear of it being too sweet, your preparation may freeze completely and block the machine. Honey adds a lovely roundness that pairs really well with the acidity of lime, but the cane sugar syrup helps adjust the final ratio (aim for at least 5g of sugar per 100mL). Do not hesitate to taste your mixture before pouring it into the vessel: it should taste decidedly sweet at room temperature to be well-balanced once very cold.

Why I always strain berries

Blackberries are delicious, but their small seeds can spoil the pleasure once the drink is chilled. Most importantly, in a slush machine, the seeds can accumulate around the auger. That is why I always use a fine mesh sieve or cheesecloth after the blender step. It takes five extra minutes, but you get a smooth liquid, which will provide a much more consistent result during mixing. By the way, if you are looking for other original non-alcoholic ideas, I also recommend you test this Frozen Virgin Mary: the tomato mocktail frappé with the Ninja Slushi, which is very nice for a change from the summer routine.

Do you strain your berry purées or do you leave the small seeds in?

Frequently asked questions

Can I use frozen blackberries?

Yes, it is actually very convenient. Just let them thaw before blending to extract as much juice as possible and make it easier to strain through a sieve.

What should I do if the mixture does not freeze after 45 minutes?

If the vessel is not overfilled, it is often due to a lack of sugar or too much water. Check your proportions or extend the cycle a little.

I don’t have honey, what can I replace it with?

Agave syrup will work perfectly, with identical proportions. It maintains the same sweetening power necessary for the liquid to freeze properly.
