Forget the blender, which often separates liquids from ice: the continuous churning of the Ninja Slushi preserves the silkiness of the mango against the smokiness of the mezcal. In a blender, the sugar-acidity balance is diluted with crushed ice, whereas here, the mixture freezes without adding unnecessary water. You get a frozen cocktail with Mexican notes, where the sweetness of the fruit meets the heat of Tajín and the acidity of chamoy. A frozen Mexican cocktail where the sweetness of the mango and the smokiness of the mezcal are enhanced by the spiciness of the chamoy, churned without ice cubes for an ideal texture.

Ingredients

  • 500 ml mango nectar

  • 150 ml water

  • 150 ml mezcal

  • 100 ml fresh lime juice

  • 100 ml agave syrup

  • For serving: chamoy sauce and Tajín seasoning

Instructions

  • In a pouring jug, mix the mango nectar, water, mezcal, lime juice, and agave syrup. The mezcal prevents the mixture from freezing if it exceeds 175 ml of alcohol per litre of preparation: this dosage is therefore precise for a good freeze.
  • Pour the 1000 ml mixture into the bowl (ensuring it is between the min and max marks) and start the Frozen Cocktail program.
  • While churning, rim your glasses with Tajín and coat the inside with chamoy sauce.
  • As soon as the indicator signals the right texture, serve directly into the decorated glasses. The drink should be drinkable through a thick straw.

Frequently asked questions

Can I replace the mezcal with tequila?

Absolutely. Keep exactly the same volume (150 ml) so as not to disrupt the freezing process. You will lose that characteristic smoky edge, but the Mangonada will still be excellent.

My cocktail is still liquid, what happened?

This is likely a slight excess of alcohol or a lack of sugar if you used a mango juice that was too thin. Add 100 ml of mango nectar or a splash of syrup and restart.

Is chamoy mandatory for this recipe?

It is the soul of the recipe! Without it, you get a very good mango-mezcal cocktail, but it is no longer technically a Mangonada. If you cannot find any, a spicy red fruit purée and a splash of lime juice can help visually.
