Ninja Slushi compatibility
Program used: Milkshake (milkshake)
The almond notes of the orgeat syrup soften the natural acidity of the kiwi and orange for a perfectly balanced finish. This unexpected blend takes on a whole new dimension once processed in the Ninja Slushi: the texture becomes incredibly velvety and icy, far from a simple blended juice. Blending the fruits before adding the milk actually prevents the mixture from curdling. It is the perfect balance between the freshness of frosted fruit and the richness of a smooth milkshake.

minutesA fruity milkshake where orgeat syrup softens the acidity of kiwi and orange, featuring a velvety, icy texture.
Ingredients
500 ml whole milk
300 ml orange juice (pulp-free)
3 kiwis, peeled and blended (approx. 200 ml of puree)
100 ml orgeat syrup
Instructions
- In a standard blender, blend the kiwis with the orange juice and orgeat syrup until you get a smooth base. Blending the fruits before adding the milk limits the risk of the mixture curdling.
- Gently stir the whole milk into this fruity base to obtain a homogeneous mixture of about 1.1 liters.
- Pour the mixture into the Ninja Slushi tank (the level will be ideal, between the min and max markers) and select the Milkshake program.
- Let the machine churn until you achieve a texture that is thick but drinkable with a straw, then serve immediately with a wide straw.
100% plant-based almond version
100% plant-based almond version: Replace the whole milk with 500 ml of almond milk. The almond flavor will be enhanced, and the drink will be lactose-free.

One of the greatest challenges when mixing citrus with dairy products is keeping the mixture stable. The acidity of kiwi and orange tends to curdle milk. My secret is to always blend the fruits with the orgeat syrup first, to create a syrupy base that coats the acidity. Only then do I gently add the whole milk, without over-blending. The Ninja Slushi will then take care of churning gently while cooling, which maintains the emulsion much better than a simple blender where everything heats up quickly. That is what gives it such a velvety finish.
The role of sugar and milk in freezing
Many ask me why so much syrup is needed in a Slushi milkshake. The key point with the Slushi is sugar as a natural antifreeze. Without it, your mixture would turn into a block of ice on the walls of the tank. Here, the orgeat syrup provides both the almond taste and the necessary sugar. Furthermore, the fats in the whole milk contribute to the final texture: they slow down the crystallization of the water contained in the fruits. If you opt for the plant-based version, choose a fairly rich almond milk or add an extra teaspoon of syrup to compensate for the lack of fat and ensure a texture that remains drinkable through a straw.

Frequently asked questions
Can I use orange juice with pulp?
I do not recommend it for this recipe. Orange pulp, combined with the kiwi seeds, risks creating a texture that is a bit too lumpy, especially with the churning of the Slushi which tends to clump the fibers together.
My mixture curdled before I even put it in the machine, what should I do?
If milk curdles upon contact with fruit, it is often because the mixture was not cold enough at the start or the mixing was done too aggressively. Try to chill your ingredients thoroughly beforehand.
How long does it take to reach the right texture?
On the Milkshake program, allow for about 45 minutes to get a nice thick texture. However, this depends on the initial temperature of your ingredients: the colder they are, the faster it goes.
Is the Milkshake program not available on all models?
Indeed, the Milkshake program is present on the entire Ninja Slushi range (FS301, FS601, FS605). You can therefore make this recipe on any of these models.
