Ninja Slushi compatibility
Program used: Milkshake (milkshake)
Today, I am revisiting a great classic of American diners, with a creamy texture that lasts without melting in two minutes. No more buying tubs of ice cream specifically for this: the Slushi frosts and textures the liquid base itself. I love this sensation of an icy and intensely cocoa-flavored drink that can be sipped peacefully through a straw. Get your best glasses ready, let’s start the machine.
Chocolate milkshake with the Ninja Slushi

minutesA chocolate milkshake prepared directly from a liquid base, without using external ice cream tubs.
Ingredients
600 ml whole milk (very important for the texture)
200 ml heavy cream (30% fat)
4 tablespoons unsweetened cocoa powder
80 ml cane sugar syrup (or agave syrup)
1 teaspoon vanilla extract
Optional: whipped cream and chocolate chips for topping
Instructions
- Whisk vigorously in a large pitcher the whole milk, heavy cream, cocoa powder, syrup, and vanilla until the cocoa is completely dissolved. The fat from the cream and whole milk prevents ice crystals from forming.
- Pour this chocolate preparation into the Ninja Slushi bowl, making sure to stay between the MIN and MAX marks on the tank.
- Select the Milkshake program and let the appliance run until the mixture thickens and takes on the appearance of a soft, straw-thick ice cream. Keep in mind that here the sugar ratio represents about 10% of the total volume to avoid crystals.
- Serve the drink directly in large glasses, top with a dome of whipped cream and sprinkle with a few chocolate chips.

Chocolate-banana milkshake : Add a well-ripened, finely blended banana to your milk and cocoa base before pouring everything into the machine’s bowl.
The balance of liquids for a creamy result
At the bar, I was often asked the secret to a milkshake that doesn’t separate in two after five minutes. With the Ninja Slushi, everything depends on the liquid base. The key point is sugar and fat: without them, the mixture freezes into a brittle block. This is why I strongly recommend whole milk and 30% cream. If you try with skimmed milk, you will get a slightly watery granita that lacks body. The cane syrup provides those famous 10% necessary sugar to texture the liquid without freezing it completely. The Milkshake program then does the churning work to gently emulsify everything with the cold.
What to do if the texture takes time to set?
When preparing a thick dairy drink, the machine can take a bit more time to lower in temperature than with a simple fruit juice. If you find that your milkshake is slow to thicken, first check that your bowl is not filled above the MAX mark. This is the classic mistake: the appliance struggles to cool too large a volume of liquid. Another tip I use all the time: prepare your base in advance and leave it in the refrigerator. A liquid that enters the tank already well chilled will save precious minutes and give a perfect texture even faster. If there is a little preparation left at the end of service, simply transfer it to an airtight container to keep it cool.
For the topping, are you team generous whipped cream or classic with nothing on top?
Frequently asked questions
Can plant-based milk be used for this Slushi milkshake?
Yes, but choose barista-style or high-fat plant-based milks like whole oat milk or coconut milk. Classic almond milk might crystallize because it lacks fat.
Why does the Milkshake program take longer than the Frappé program?
Milk and cream need more time to freeze evenly without forming water flakes. The churning speed is specifically adapted to this heavier texture.
Should I put ice cubes or vanilla ice cream in the bowl?
Definitely not. The Ninja Slushi freezes the liquid preparation itself. Never put solid ice or ice cubes in the bowl, as this would block and damage the auger.
My mixture is not freezing enough and remains too liquid, what should I do?
Make sure you used real whole milk and cream. If your kitchen is very hot, the process may be slowed down. Let the appliance run a bit longer or chill your liquids before pouring them in.
