Ingredients
500 ml water
150 ml lime juice (freshly squeezed)
200 g raspberries (fresh or thawed frozen)
120 ml cane sugar syrup (or agave syrup)
Instructions
- Blend the raspberries to make a coulis, then pass it through a fine sieve if you wish to remove the seeds for a perfectly smooth consistency.
- In a pitcher, mix the water, lime juice, raspberry coulis, and sugar syrup until the preparation is homogenous. The sugar syrup prevents the water and fruit from freezing into a compact block.
- Pour the mixture into the Ninja Slushi bowl, checking that the level is well between the MIN and MAX lines.
- Select the Slush program. Let the machine run for about 30 minutes until you obtain a soft slush that is sippable through a straw.

Raspberry Margarita Version : To turn this slush into a cocktail, add 120 ml of tequila and 50 ml of triple sec to the liquid base, and start the Frozen Cocktail program. Always measure alcohol with care.
The balance of sugar and acidity
To succeed with this recipe, the syrup dosage is crucial. The key point with the Slushi is that sugar acts as a natural antifreeze. If you reduce the dose too much to make it lighter, the water in the preparation will simply freeze into a hard block against the bowl’s auger, and the machine might display an error light. Here, the combination of highly acidic citrus and red berries requires rounding off the edges anyway. I really advise you to taste your liquid before pouring it: it should seem slightly too sweet at room temperature. Cold numbs some of our taste receptors, so once it reaches the frozen state, the balance will be perfect. If you prefer other summer fruits, you can apply exactly the same principle with a melon and lime slush or any other summer variation.
Adapting the preparation according to the raspberries
I often use frozen raspberry crumbles for this preparation, which is very convenient when it is out of season. The only rule is to let them thaw properly before blending, otherwise your coulis will be too thick to mix well with the water and juice. Sifting is optional: if the small seeds do not bother you, you can pour everything directly. Just keep in mind that everything that goes into the bowl must be liquid and fluid at the start. If your preparation is too thick, the machine will strain unnecessarily. If you are unsure about the consistency of your mix, add a splash of water to thin it out before reaching the minimum mark. No, sweeteners do not have the same chemical properties as real sugar. Without it, your slush will freeze into a block of ice and block the rotation of the auger.
Which program should I use if I add the margarita option?
As soon as you introduce alcohol into the bowl, you must switch to the Frozen Cocktail program, which adjusts the temperature for alcohol that does not freeze.
