A great cocktail classic revisited with the Ninja Slushi for an intensely fresh blue drink, without the watery effect of a blender.

Ingredients

  • 100 ml vodka

  • 110 ml blue curacao (liqueur)

  • 100 ml freshly squeezed lemon juice

  • 500 ml classic lemonade (not sugar-free)

  • 255 ml water

Instructions

  • In a pitcher, mix the vodka, blue curacao, lemon juice, lemonade, and water to obtain a consistent color. Sugar-free lemonade would prevent the mixture from freezing correctly in the Ninja Slushi.
  • Pour the mixture into the Ninja Slushi bowl, making sure to exceed the minimum fill line.
  • Select the Frozen Cocktail program and let the machine work until a nice straw-ready texture is achieved. The program automatically compensates for the alcohol which lowers the freezing point.
  • Serve the drink directly into large glasses and optionally add a fresh lemon slice on the rim.

The balance of ingredients for a successful cocktail

For this blue lagoon, success depends on the dosage of alcohol and sugar. The alcohol, here the vodka and curacao liqueur, lowers the freezing point. If you are too heavy-handed, the drink will remain liquid even after an hour in the machine. That is why I recommend sticking to 240 ml of total alcohol for this volume. At the same time, classic lemonade provides the essential sugar so that the cold creates those tiny crystals that make the mixture pleasant. I spent a long time preparing my frozen cocktails with a good old blender and crushed ice. The problem with this technique is that the drink separates very quickly: the water rises to the surface and you end up drinking the concentrated syrup at the bottom of the glass. Can I use sugar-free lemonade to make it lighter?

No, sugar acts as an anti-freeze. Sugar-free lemonade does not contain enough sugar for the setting process, and your mixture might freeze into a large block of ice instead of being drinkable through a straw.
