A caramel iced coffee recipe, slowly churned for a perfect texture without ice chunks.

Ingredients

  • 300 ml espresso (cold)

  • 300 ml whole milk (or oat barista style plant-based drink)

  • 60 ml caramel syrup

  • 2 tablespoons caramel sauce (for garnish)

  • Whipped cream

Instructions

  • Brew your espressos in advance and let them cool completely in the refrigerator. Hot coffee would melt the frosted walls and delay the freezing process.
  • In a pitcher, mix the cold coffee, milk, and caramel syrup until you get a smooth base. The caramel syrup prevents the mixture from freezing into a solid block.
  • Pour the preparation into the Ninja Slushi bowl, making sure to exceed the minimum mark and stay below the max mark.
  • Select the Frappé program and let the machine churn until the mixture reaches a beautiful frozen and firm consistency.
  • Decorate the sides of your glasses with caramel sauce, pour in the frappuccino, and top generously with whipped cream before serving.

The essential balance between sugar and texture

A successful frappé in a machine depends not only on the choice of coffee, but on the sugar dosage. In a traditional blender, you mix ice cubes with a hot or lukewarm liquid. With the Ninja Slushi, it is very different: the appliance cools the bowl’s walls to create ice from the liquid. Without sufficient sugar, your preparation will turn into a hard block impossible to churn. This is where caramel syrup acts as a natural antifreeze to guarantee a flexible and creamy texture, easy to sip through a straw. If you find the final drink a bit too sweet for your taste, I strongly advise not to reduce the syrup dose: instead, lengthen your preparation with a bit more whole milk or an oat barista plant-based drink, which offers excellent creaminess under the churning action.

Adapting the recipe for larger models

The Ninja Slushi range does not offer exactly the same programs on all its appliances, and this changes things for this type of iced coffee. On the standard model I often use (the FS301), the Frappé program is specifically designed for dairy bases and perfectly handles the milk’s freezing. However, if you are equipped with the XL or Max model, you will notice that this preset does not exist. Don’t worry, I recommend running the Milkshake program, or otherwise the Slush mode, simply by monitoring the consistency through the bowl. Milk sometimes takes a bit longer to frost than clear fruit juices. As soon as the churning forms beautiful thick waves, it’s ready. In any case, remember to always use previously cooled espresso, as coffee straight from the cup would unnecessarily extend your waiting time.

Why isn’t my iced coffee getting a thick texture?

Check that your coffee was cold when you poured it in. If the mixture is at room temperature or lukewarm, the machine will take much longer to form ice.

I don’t have the Frappé program on my XL model, what should I do?

Use the Milkshake program which is very similar for milk-based preparations. The Slush mode also works, just keep an eye on the texture.

Can this frappuccino be made with sweetener instead of syrup?

It is strongly discouraged. The real sugar in the syrup is essential to prevent the liquid from freezing into a single solid block against the machine’s cylinder.

Should I put ice cubes in the bowl with the coffee?

Absolutely not. The machine creates the frost itself by cooling your liquid mixture of coffee and milk. Only add your liquid ingredients.
