Ingredients
175 ml white rum
150 ml mint syrup (or mint-infused cane sugar syrup)
250 ml fresh lime juice
490 ml sparkling water (or lemon-lime soda)
A few fresh mint leaves (for garnish)
Instructions
- Squeeze the limes and strain the juice using a fine mesh strainer. Filtering the pulp prevents it from interfering with the rotation of your device’s auger.
- In a container, mix the white rum, filtered lime juice, mint syrup, and sparkling water. Alcohol does not freeze: respect the dosage (20% max of the volume) to avoid an overly liquid drink.
- Pour the mixture into the Ninja Slushi tank, ensuring the level is between the min and max marks.
- Select the Frozen Cocktail program and let the machine churn until the end signal.
- Serve the drink in glasses immediately after the cycle ends, then garnish with a mint leaf.

Frozen Virgin Mojito (non-alcoholic) : Remove the rum, replace it with an identical volume of extra sparkling water or soda, and select the Slush program. The setting time in the machine will be shorter.
The secret to successful freezing with alcohol
To get that characteristic slushy effect with a cocktail, it is all about the balance between sugar and alcohol. White rum, by nature, acts as a powerful antifreeze. If you pour too much, the preparation will never set. That is why I always limit myself to 20% alcohol maximum of the total volume. Mint syrup is just as essential here: not only does it provide flavor, but its sugar allows the water to crystallize properly without forming a hard block. If you find the consistency is struggling to thicken, it is often a sign of a mixture that is not sweet enough. In this case, simply add a splash of syrup directly into the tank.
Why I use syrup instead of muddled mint
The traditional Cuban recipe calls for crushing fresh leaves with a muddler, but with our device, this poses a technical issue. Small pieces of leaves risk blocking the auger or getting stuck in the pour spout. Using a syrup ensures smooth and seamless churning. If you insist on the authentic flavor of fresh herbs, prepare your own syrup by infusing a large bunch of mint in a hot sugar syrup, then strain it very carefully. Do I really need to strain the lime juice?
Yes, it is an essential step. Thick pulp or seeds can accumulate around the mechanism and disrupt the churning. Clear juice ensures your device operates correctly.
Which program should I use for the non-alcoholic version?
If you remove the rum, you should no longer use Frozen Cocktail. Switch to the Slush program. Without alcohol, the liquid will freeze faster and this setting is designed for that.
