Non-Alcoholic Bora Bora Cocktail with Ninja Slushi

Ninja Slushi compatibility

Program used: Slush (slushie)

This famous exotic mocktail takes on a whole new dimension when frozen directly in the machine, without any need for crushed ice. No more blender versions where ice cubes dilute the taste: here the fruit remains pure. You get a deeply fruity, smooth mixture that is drinkable through a straw right from the start. I often serve this classic with pineapple and passion fruit notes to delight everyone, without using a single drop of alcohol.

An exotic pineapple and passion fruit mocktail, transformed into a smooth granita thanks to Ninja Slushi. No more melted ice cubes, just 100% fruit.

Ingredients

  • 500 ml pineapple juice

  • 300 ml passion fruit nectar

  • 100 ml grenadine syrup

  • 50 ml lemon or lime juice

  • 50 ml water

Instructions

  • In a pitcher, mix the pineapple juice, passion fruit juice, lemon juice, water, and grenadine syrup. The sugar in the grenadine prevents the mixture from freezing into a hard block of ice.
  • Pour this preparation into the Ninja Slushi bowl, making sure to stay between the min and max markers.
  • Select the Slush program (or Frozen Juice) and let the machine crystallize the liquid.
  • Once the frozen texture is reached, ideally drinkable through a straw, serve immediately in large glasses with an orange slice.

Sparkling Bora Bora

Sparkling Bora Bora: Replace the still water with sparkling water or lemonade just before pouring into the bowl to achieve a slightly airy texture at the end of the cycle.

What really makes the texture last

The key point with Slushi is sugar: without it (or a technical substitute, or the alcohol from a real cocktail), the liquid freezes into a block instead of remaining supple and drinkable through a straw. For this Bora Bora, it’s the winning combo between passion fruit nectar and grenadine syrup that does the job. I don’t add any extra sugar because the juices provide exactly what is needed as a natural anti-freeze so the machine can churn without blocking the auger. This is the classic mistake with homemade mocktails: sometimes we want to make them lighter by diluting generously with water, and the machine goes into safety mode because the ice formed becomes too hard. Here, the recipe is calibrated for perfect and continuous churning.

No more diluted effect of old blenders

Behind a counter, I used to spend my time adjusting the ratio of crushed ice to prevent non-alcoholic cocktails from becoming watery after ten minutes. The great advantage of preparing this drink with Ninja Slushi is that the fruit remains pure from start to finish. The water added in this recipe only serves to balance the very sweet side of the pineapple and grenadine for an ultra-refreshing result, without ever breaking the density of the mocktail. The coldness of the bowl fixes the flavors instead of drowning them, which completely changes the perception of the fruit juices. By the way, if you are looking for other non-alcoholic alternatives with a kick, my Non-alcoholic ginger beer frozen slush recipe works on this same principle of intense, undiluted freshness.

Frequently asked questions

Can I use pure passion fruit juice instead of nectar?

Yes, but pure juice is often less sweet and significantly more acidic than nectar. Make sure to compensate with an extra splash of grenadine syrup so the frozen texture sets well without freezing solid.

Why use the Slush program and not Frozen Juice?

On my FS301, the Slush program is perfect and very consistent for this mixture. However, Frozen Juice (available on XL and Max models) works just as well for a fruit-to-sugar ratio like this one.

Can I prepare the Bora Bora mixture in advance?

Absolutely. I even recommend mixing your juices in a pitcher and leaving them in the refrigerator. A cold liquid will reach the right texture much faster once poured into the machine.

What should I do if the machine beeps and stops during the cycle?

This is often a sign that the liquid is not sweet enough (it freezes too hard) or that you have exceeded the max marker. Wait a few minutes and add a splash of grenadine syrup or pineapple juice to soften the ice.
