Ingredients
2 espressos (about 60 ml), cooled
500 ml whole milk (for extra body)
100 ml vanilla syrup
1 teaspoon liquid vanilla extract
Whipped cream (for topping)
Instructions
- Brew your espressos and let them cool completely in the refrigerator (never pour hot liquid into the Ninja Slushi bowl).
- In a pitcher, mix the whole milk, cold espressos, vanilla syrup, and vanilla extract. The syrup provides flavor but above all the essential sugar to prevent the milk from freezing solid.
- Pour the mixture into the Ninja Slushi bowl, ensuring the level is between the MIN and MAX lines.
- Select the Frappé program and let the machine work until you get a thick and smooth texture, suitable for a wide straw (the sugar ratio is around 10 to 12% thanks to the syrup).
- Serve in tall glasses and top generously with whipped cream.

How do you get a good texture without ice cubes?
When making homemade iced coffees in a blender, the classic result is a mixture that separates: the water from the melted crushed ice on one side, and the milk base on the other. The real strength of the Ninja Slushi is that it continuously cools and churns your liquid without any added ice. But for this to work, the absolute golden rule is the sugar content. In this preparation, the 100 ml of vanilla syrup are not just there for taste: they lower the freezing point of the milk. Without this sugar, the mixture would freeze into a hard block on the auger and make the machine beep. It is this precise balance that gives that velvety consistency that flows so well through a wide straw. By the way, the basic principle is exactly the same if you try my Vanilla Milkshake in the Ninja Slushi, it all comes down to the sugar content of your base.
Which program to use depending on your model
I systematically use the Frappé program on my FS301 for milk-based coffee drinks. This setting is specifically designed to give volume and body to bases containing fat, like whole milk. If you own an appliance from the XL or Max range instead, you will notice that this preset doesn’t exist. Don’t worry: simply run the Milkshake program (or Slush mode if necessary). The churning will be very similar. Just keep an eye on the consistency after about half an hour: milk freezes a bit differently than clear fruit juices, so don’t hesitate to stop the machine as soon as you feel the texture is ideal. Finally, a little practical reminder that I learned the hard way: you should never pour freshly brewed coffee into the cylinder, as the initial heat considerably extends the freezing time and puts a strain on the compressor.

Yes, but these plant-based milks are generally lower in fat than whole milk. The final texture will be a bit less smooth, and the setting time might be slightly shorter.
How to do it on a Ninja Slushi XL or Max?
These models do not have the Frappé program. Use the Milkshake or Slush program for your milk bases: the resulting texture will be quite satisfactory.
Can the frappuccino be stored in the bowl?
The machine can maintain the cold, but the coffee flavors fade fairly quickly with continuous churning. I recommend serving within two hours for optimal taste.
