Ninja Slushi compatibility
Program used: Frozen Juice (frozen juice)
A vibrant and exotic drink, perfect for taking full advantage of your machine’s Frozen Juice program. I love this combination: the sweetness of the dragon fruit contrasts beautifully with the floral tartness of the hibiscus. The result is highly refreshing, with a very smooth texture that is perfect for sipping through a straw. It is the type of creation that always surprises with its striking color and balanced taste.

Ingredients
300 g fresh or frozen dragon fruit (pitaya) flesh
400 ml chilled hibiscus infusion
150 ml apple juice
100 ml cane sugar syrup (or agave)
50 ml lime juice
Instructions
- Prepare the hibiscus infusion in advance and let it cool completely.
- Blend the dragon fruit with the infusion, apple juice, syrup, and lime juice until you reach a smooth consistency. Blending the fruit finely prevents chunks from blocking the auger.
- Strain if desired, then pour the liquid into the Ninja Slushi bowl (approx. 1000 ml), checking that the level is correctly between the min and max marks. The syrup ensures proper freezing without creating a solid block.
- Select the Frozen Juice program and let the machine freeze the mixture for 45 to 50 minutes until you reach a consistency suitable for drinking through a straw.
Adding coconut milk
Adding coconut milk: For a smoother, creamier version, replace the apple juice with coconut milk and use the Slush program.

View recipeBalancing sugar and floral acidity
For this recipe, the crucial point is managing the sugar ratio. The hibiscus infusion is naturally tart and contains no sugar, which means it would freeze into a hard block if used alone. This is why adding cane syrup and apple juice is essential to achieve that fluidity typical of straw-sippable drinks. I have noticed that dragon fruit provides sweetness, but not enough anti-freeze power for the machine. If you wish to limit calorie intake, you can read my guide on which sweetener to choose for a slush machine. The important thing is to maintain enough substance so the auger can turn without straining.
Why fine blending is essential
One of the classic mistakes I often see is leaving large chunks of pulp in the mixture. Even though pitaya is very tender, I highly recommend blending the preparation very finely in a blender before pouring it into the bowl. The Slushi does not mix ingredients, it simply cools them by churning them continuously. If chunks remain, they may get stuck in the auger, which can cause error beeps. If you love these floral notes, I invite you to take a look at my recipe for hibiscus (bissap) slush for other infusion-based ideas perfectly suited for the slush format.

Frequently asked questions
Can I use white dragon fruit instead of red?
Yes, the taste will be very similar, but you will lose the vibrant pink color. The texture will remain identical.
Do I need to strain the small black seeds of the dragon fruit?
Not necessarily if you blend them very finely in a blender beforehand. The Frozen Juice program handles them well if they are dispersed.
What should I do if I have leftover smoothie after serving?
You can store it in the freezer or refrigerator depending on your preferences. I explain in detail what to do with leftover slush that isn’t consumed immediately in a dedicated guide.
