Apple ginger mocktail with Ninja Slushi

Prepare a non-alcoholic apple ginger mocktail in the Ninja Slushi. A refreshing, well-balanced, and easy-to-make frozen drink for your aperitifs.

Ninja Slushi compatibility

Program used: Slush (slushie)

The zing of ginger combined with the sweetness of apple, transformed into a super refreshing non-alcoholic frozen drink, perfect for impromptu gatherings. I had to adjust the lime juice: my first version lacked a bit of zest against the apple’s sweetness. The result is a fruity and spicy blend with a velvety texture that is very pleasant to sip. A real frozen delight that will surprise your guests without too much effort.

Ingredients

  • 750 ml 100% pure apple juice

  • 60 ml ginger syrup (or ginger concentrate)

  • 60 ml fresh lime juice

  • 30 ml honey or agave syrup

  • 150 ml water

  • Fresh mint leaves (for garnish)

Instructions

  • In a pitcher, mix the apple juice, ginger syrup, lime juice, honey, and water until the honey is well dissolved. The sugar in the juice and honey is crucial: it prevents the mixture from freezing into a solid block.
  • Pour the mixture into the vessel of the Ninja Slushi, taking care to respect the MIN and MAX marks.
  • Select the Slush programme (or Frozen Juice) and let the machine work to obtain a straw-drinkable texture.
  • Serve in glasses with a straw and garnish with a fresh mint leaf.

Spiced thyme version

Infuse a sprig of thyme in hot water for 10 minutes, let it cool, and use this infusion instead of plain water for a herbaceous note.

The importance of sugar for a good texture

To succeed in making a non-alcoholic drink in the Ninja Slushi, sugar dosage is key. Unlike a cocktail where alcohol lowers the freezing point, here it is the natural sugar of the apple, combined with honey and ginger syrup, that will prevent your preparation from turning into a solid block of ice. I always recommend tasting the mixture at room temperature before pouring it into the machine: it should taste slightly too sweet, because the intense cold tends to numb the taste buds a bit. If you find that your preparation freezes too quickly or the machine is struggling while making noise, it is a sign that it lacks a bit of sugar. In this case, don’t hesitate to add a dash of agave syrup. This golden rule has saved me more than one batch during my trials. You can actually apply this same principle for a green apple granita with Ninja Slushi.

Dosing the ginger without masking the fruit

Ginger provides a real kick, but you have to be careful not to completely overpower the apple flavour. I generally use store-bought ginger syrup because it provides both the characteristic spicy taste and the sugar level necessary for the right texture consistency. If you prefer to use cold-pressed pure ginger juice, you must increase the dose of honey or simple syrup to compensate for the loss of liquid sugar. When freezing in the machine with the Slush programme, the spicy sensation tends to round off very pleasantly thanks to the cold. If the drink tastes a little too sweet to you, squeeze a little more fresh lime juice directly into the glass: the acidity will instantly wake up the spices. It is exactly the same flavour balance I look for when I prepare a non-alcoholic ginger beer slush.

Frequently asked questions

Why does my mixture get too hard and block the machine?

This is often a sign of insufficient sugar. Sugar acts as an antifreeze. Add a little syrup or honey, mix well, and start the programme again.

Can I use freshly grated ginger?

Yes, but I recommend infusing it in hot water first, then straining it well. Small pieces may interfere with the machine’s mixing action.

Which programme should I choose on my FS301?

The Slush programme is perfect for this ratio and will give you a good straw consistency. The Frozen Juice mode is also an option if you prefer a slightly softer result.
