Coconut Granita

Ninja Slushi compatibility

Program used: Slush (slushie)

No more scraping the coconut mixture with a fork: the machine handles the crystallization for a perfectly homogeneous result. The combination of creamy milk and plant-based water offers a refreshing snow, ideal for finishing a summer meal. A touch of lime awakens the preparation, creating a very pleasant balance of flavors to enjoy with a spoon.

A coconut snow ready to enjoy with a spoon, without the effort of manual scraping. The right balance between sweetness and freshness.

Ingredients

  • 400 ml coconut milk (canned, high in fat)

  • 400 ml coconut water (or mineral water)

  • 80 ml cane syrup

  • 20 ml lime juice (to enhance the taste)

Instructions

  • In a pitcher, whisk vigorously the coconut milk, coconut water, cane syrup, and lime juice to homogenize the coconut fats. The syrup ensures flexible crystallization; without sugar, the coconut milk freezes abruptly.
  • Pour the preparation into the Ninja Slushi bowl, checking that the level is well between the MIN and MAX lines.
  • Select the Slush program and let the machine run for about 45 minutes until the desired fluffy consistency is reached.
  • Serve directly in bowls and enjoy with a spoon, with optional toasted coconut flakes on top.

Coconut-Rum Cocktail Version

Coconut-Rum Cocktail Version : For a summer vibe, add 10 cl of white rum to the bowl during the last few minutes of mixing (or use the Frozen Cocktail program).

The Art of Mastering Coconut Crystallization

When working with canned coconut milk, the high fat content sometimes makes freezing unpredictable. The secret to keeping this preparation velvety in the Ninja Slushi is to whisk the ingredients well before filling. If the fat separates from the water, you will get lumps instead of fluid snow. I also recommend monitoring the sugar intake, as sugar acts as a natural antifreeze. If you reduce the cane syrup too much, the machine might struggle to mix a hard block. It is the same principle that allows for a successful strawberry mint granita with the Ninja Slushi. With this tested ratio, you ensure a smooth dessert.

How to Handle Adding Alcohol for the Festive Version

Turning this sweet base into a frozen cocktail requires a small adaptation. Since alcohol lowers the freezing point, if you plan to include rum from the start, I recommend switching to the Frozen Cocktail program. You can also choose to pour the alcohol only five minutes before serving. The granita is already formed, the alcohol just slightly relaxes the texture while flavoring everything. This method allows you to offer a first round without alcohol, then strengthen the rest to prolong the aperitif. Remember that with rum, a little moderation is required.

Do you prefer to enjoy it as is or have you tried the version with a touch of rum?

Frequently asked questions

Why does my coconut milk freeze into large blocks in the machine?

This often happens if the preparation lacks sugar or if the fats have separated. Whisk the mixture well at the start and make sure to keep the indicated dose of syrup.

Can I use carton coconut milk instead of canned?

It is possible, but the texture will be closer to a classic ice cube, less rich. Canned milk provides an essential binder to obtain a beautiful granita that can be eaten with a spoon.

Which program should I choose if I add rum from the start?

If alcohol is present in the bowl from the first minute, you must select the Frozen Cocktail program. The appliance will adapt its cooling cycle.
