Vanilla Affogato Frappé for Ninja Slushi

Ninja Slushi compatibility

Program used: Frappé (frappé)

No Frappé program on the XL and Max; use Milkshake and adjust the texture.

The famous Italian coffee dessert is transformed here into a smooth, icy drink, without the ice shards typical of a blender. On my first attempt, I wanted to reduce the syrup to lower the bitterness, but the mixture just froze into a solid block of ice. Since then, I have found the perfect balance: an ultra-indulgent vanilla coffee frappé, with a velvety texture that is meant to be sipped through a straw before being finished with a spoon. A true refreshing break, ideal for treating your guests at snack time.

Ingredients

  • 250 ml strong espresso (cold)

  • 600 ml whole milk

  • 100 ml heavy cream (30% fat)

  • 100 ml vanilla syrup

Instructions

  • Brew the espressos and let them cool completely. Hot coffee would force the machine to compensate for the temperature and would significantly increase the freezing time.
  • In a pitcher, mix the cold coffee, whole milk, heavy cream, and vanilla syrup.
  • Pour the mixture into the Ninja Slushi tank (the level will be around 1050 ml, well above the minimum).
  • Select the Frappé program and let the machine work until you reach a dense texture, then serve with a spoon.

The art of the perfect iced coffee

To succeed in making a milky coffee frappé without it turning into a hard block, sugar plays a fundamental role. It acts as an antifreeze. In this affogato frappé, the vanilla syrup is not just there for taste, it guarantees the smoothness of the result. If you find the whole thing too sweet, you can use a stronger coffee base, but I advise against reducing the amount of syrup. The heavy cream, with its 30% fat content, also helps to bind everything together for a creamy finish that melts gently on the palate.

Which program should you use based on your equipment?

I use the FS301 here, which has a mode specially designed for this type of dairy preparation: the Frappé program. Its mixing cycle is calibrated to incorporate the cream properly. If you opted for a large capacity model, this setting is not present. In that case, simply run your preparation on the Milkshake program. The freezing time will be slightly different, just keep an eye on it through the side and serve when the mixture becomes firm.

Frequently asked questions

Why does my coffee freeze into a solid block?

It’s a lack of sugar! The vanilla syrup acts as an antifreeze, make sure to follow the 100 ml dose to ensure the right consistency.

Do I really need to wait for the espresso to cool down?

Yes, otherwise the machine will have to cool the liquid down before it can even begin to freeze, which unnecessarily extends the process.

Can I use plant-based milk?

Absolutely, but prefer a “barista” style plant-based drink (often oat-based) to maintain a minimum level of fat and avoid a gritty texture.
